Cheddar Jalapeño Quiche

This is an amazing cheddar jalapeno quiche I made in when I was studying abroad in Australia.

INGREDIENTS

  • 9″ pie crust, homemade or storebought
  • 1/2 cup cream cheese
  • 2 jalapeños, diced, and 1 sliced into 6 rounds
  • 1/2 cup cream
  • 1/2 cup half-and-half
  • 4 large eggs (or 5 small)
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon paprika
  • 1/8 teaspoon salt
  • 1/2 cup grated cheddar-jack

DIRECTIONS

  1. Turn your oven to 400 degrees F.
  2. Thaw the pie crust for 10 minutes.
  3. Prick the crust all over the bottom and sides with a fork to make tiny holes.
  4. Bake it for 10 minutes.
  5. Remove the crust and reduce the oven temperature to 350 degrees.
  6. While the crust is hot, spread the cream cheese all over the bottom as evenly as possible.
  7. Sprinkle that with the diced jalapeños (the rounds are for garnish later on).
  8. Put the cream and half-and-half into a small pot and put it over medium heat about 5 minutes, or until tiny bubbles appear around the edges. This is called “scalding” – where you bring it to just under the boiling point.
  9. Beat the eggs together in a bowl.
  10. Add the hot cream mixture to the eggs and combine well.
  11. Add all the spices and salt.
  12. Pour into the crust and bake for 30 minutes.
  13. After 30 minutes, arrange the jalapeño slices over the top in a circle and return to oven for 10 minutes.
  14. Sprinkle with cheese and bake another 5 minutes.
  15. Cool 30-45 minutes before serving or cool completely and serve it cold.

    I found this recipe here.

Oven Roasted BBQ Chicken

This is the finished product of the BBQ chicken I made.
All I added to that was onion, lemon, and bell pepper. I also marinated the chicken in BBQ sauce for a few hours for it to not have a dry taste.

I let it sit in the oven for about 30-35 minutes on 350F.

Banana Nutella Ice Cream

The ice cream turned out amazing. It had a really nice thick texture and the crushed almonds added a lot to it.

This is all I used!  +CRUSHED ALMONDS

I started by crushing up some almonds, and then I blended all the ingredients together. I used 4 bananas and about a 1/3 cup of Nutella. The ice cream turned out really well, and it's a bit healthier than most store bought ice cream.

Same Old Enchiladas with a Different Sauce

I used 2 different peppers to spice things up.

Drum Stick Cooking Spoon that was a really awesome Christmas gift!

Mixing it all up

Topped it off with some pepper jack cheese and a mild enchilada sauce I bought.

One of the peppers had to be eaten before the picture was even taken!

The directions are the same exact way I made the ones before. It's a simple and easy recipe that anyone can cook!

The sharp cheddar and the green enchilada sauce ended up to be a great match together.

Ingredients

  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 can of any green salsa
  • flour tortillas
  • 2 cups shredded Cheddar cheese
  • 1 can of re-fried beans
  • 1 cup of rice

    Directions

    1. Preheat oven to 350 degrees F . In a skillet over medium high heat, cook the ground beef and onion until beef is evenly browned and onion is tender.
    2. Prepare the enchilada sauce according to package directions. Pour 1/4 cup of the sauce into the bottom of a 9x13 inch baking dish.
    3. On each flour tortilla, place an equal portion of the ground beef mixture and about 1 ounce of Cheddar cheese, reserving at least 1/2 cup of cheese. Then tightly roll the tortillas and place seam side down in the baking dish.
    4. Pour the remaining sauce over the top of the enchiladas and sprinkle with the remaining cheese and olives.
    5. Bake in a preheated oven for 20 minutes, or until the sauce is bubbly and cheese is thoroughly melted.

Rolling Up Some Sushi

Using a purple bamboo mat to roll up some sushi.

I put about an inch of rice on the sushi paper.

This is one of my tuna salad rolls with shredded carrots in it.

These rolls look delicious!

I set up the table for the party. It was fairly quick to make and they were all gone by the end of the night.

               Ingredients:

                                      1. Sushi rice
                                     2. Seaweed paper
                                     3. Crab sticks
                                  4. Shredded carrots
                                     5. Tuna salad
                                  6. Sliced cucumber
                                  7. Japanese Caviar
                                     8. Rice vinegar
                    9. Whatever else you feel like putting it.

Directions:

First cook the rice, and after it is cooked add a little rice vinegar to it and let is cool for about 15 minutes. After that get all of your ingredients ready and start rolling up some sushi with your bamboo mat. All of these ingredients should run you at about $30 and will make about 8-10 rolls. It also only took me about 30 minutes to make all of it after the rice was ready.

Stuffed Shells with Sausage and Spinach

Stuffed Shells with Sausage and Spinach

Stuffed Shells with Sausage and Spinach Recipe

How to make Baked Shells with Sausage and Spinach

Cook some large pasta shells according to the package directions. Then, when they are cooked, drain and add to a large bowl filled with ice water.

Now, on to the filling. Start by removing the casing from sausage links. Just use a sharp knife to pierce the casing and peel it off the meat.

Heat a large skillet over medium heat. Once hot, add the pork sausage to the pan and use a wooden spoon or similar to break the sausage apart. Cook the sausage until browned.

Add a tablespoon of minced garlic and cook for about 30 seconds. Watch the garlic does not burn, here.

Pour in a can of diced tomatoes, juice and all.

Now defrost some frozen spinach in the microwave (this takes 1-2 minutes), once defrosted, squeeze the spinach over a bowl. We do not want the water, only the spinach.

Add the spinach to the pan and stir.

Now, remove the pan from the heat and add in some ricotta cheese. This will make the filling creamy. Taste for seasoning, then use a spoon to fill each pasta shell.

Sprinkle a little cheese on top then bake in the oven for 25-30 minutes or until the cheese has melted and the tips of the shells begin to crisp up and brown.

Baked Shells with Sausage and Spinach Recipe
The filling for these stuffed shells are not too gooey or soft, so not only do they make for an excellent dinner served with a salad on the side, they double as finger food for your next party. Substitute pork sausage for chicken sausage, just add a tablespoon of olive oil to the pan before adding the chicken sausage so it does not stick to the pan.
Prep Time: 5 minutes
Cook Time: 35 minutes
Yield: serves 4
Ingredients
  • 16-18 jumbo pasta shells
  • 1 pound fresh pork sausage links, casing removed
  • 1 tablespoon minced garlic
  • 1 (14-ounce) can diced tomatoes
  • 1 cup frozen spinach, thawed and squeeze dry
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozarella cheese
  • salt and freshly ground pepper
Method
  1. Preheat oven to 350 degrees F and fill a large bowl with cold water and ice, set aside.
  2. Bring a large pot of salted water to a boil. Add pasta shells and cook according to package directions. Drain well then add to ice water until ready to stuff.
  3. Heat a large skillet over medium-high heat. Add pork sausage then use a wooden spoon to break up the sausage, cook 5-6 minutes until browned.
  4. Add garlic and cook 30 seconds then add tomatoes and spinach; cook 1 minute.
  5. Remove pan from heat and stir in ricotta cheese.
  6. Using a spoon, fill pasta shells with pork filling and arrange in a baking dish (9-inch x 9-inch baking dish works well). Sprinkle tops with shredded cheese then bake in the oven 25-30 minutes until cheese has melted and tips of shells begin to crisp and brown.

Spinach & Bulgur Wheat Stuffed Red Peppers {Vegan}

Spinach & Bulgur Wheat Stuffed Red Peppers {Vegan}
This is a similar recipe to the stuffed bell pepper recipe I posted up last month except with a vegan twist to it. I found it at this blog. I highly recommend trying to make stuffed peppers because they are simple to make and turn out great when baked in the oven.

Serves 6

1 cup bulgur wheat (medium ground)
1 teaspoon salt, divided
2 cups boiling water
3 tablespoons olive oil, divided
2 medium onions, diced
5 large cloves garlic, minced
1 lb baby spinach, rinsed
1/8 teaspoon black pepper
6 medium red bell peppers, halved and deseeded
4 tablespoons pine nuts

Combine the bulgur, 1/2 teaspoon salt, and boiling water in a medium bowl; cover and let sit until tender, about 20 minutes.  Drain the bulgur in a fine mesh sieve, gently pushing with the back of a wooden spoon to extract as much water as possible; set aside.

Preheat oven to 400F.  Line a large baking sheet with foil or a silpat liner; arrange the peppers (cut side up) on the baking sheet.  Set aside for now.

Heat 2 tablespoons of oil in a large skillet over medium-high heat; add the onion and cook until softened and starting to brown, about 5 to 7 minutes.

Add the garlic and cook 1 minute, then stir in the spinach and 1 tablespoon of water and cook (covered) until wilted, about 3 to 5 minutes.

Turn off the heat and stir in the black pepper and the remaining 1/2 teaspoon salt.
Stir together the bulgur and spinach mixture and stuff it into the peppers.  Pour 4 tablespoons of water into the bottom of the pan; cover with foil and bake until the peppers are tender, about 45 minutes.

Add the remaining 1 tablespoon of oil to a small skillet over medium heat.

Add the pine nuts and cook until golden brown, about 1 to 2 minutes, stirring constantly. Sprinkle the toasted nuts on top of the stuffed peppers and serve.
