Found this recipe here and it looks like a great one to make for a party when you're in a hurry and need some quick appetizers.

2 tablespoons extra-virgin olive oil
4 tablespoons balsamic vinegar
1 teaspoon lemon zest
1 teaspoon orange zest
1 tablespoon finely chopped chives
8 slices San Danielle prosciutto
2 cups mixed greens or baby arugula
1/4 cup shaved Parmesan cheese
salt and pepper
Instructions
- Begin by blanching the green beans, see how-to video.
- Lay the prosciutto flat in a single layer. Add the green beans to the middle of the prosciutto and divide the greens on top of the beans. Roll the prosciutto over the greens and beans.
- Divide the prosciutto rolls between four plates.
- Make the dressing by combining the olive oil, balsamic vinegar, lemon zest, orange zest, chives and a little salt and pepper. When ready to serve drizzle the dressing over the prosciutto salad rolls.
